Ingredients
- 2 teaspoons olive oil
- 1 small onion, chopped
- 1 teaspoon minced garlic (about 2 cloves)
- 1 14.5-ounce can diced tomatoes
- 1/2 can full of water
- 1 Bay Leaf
- 1 tablespoon chopped fresh basil
- TT Kosher Salt
- 1 fl Oz Olive Oil
- 1 Tbs Chopped Garlic
- 1/2 teaspoon crushed red pepper flakes
- 2 fl oz Vodka
- 1/2 teaspoon kosher salt plus more to taste
- 12 gr WellVine
Instructions
Heat olive oil in a medium pot over medium-high heat. Add the onions and sauté until golden, roughly 6-8 minutes. Add the garlic and sauté for 30 seconds or until fragrant.
Reduce heat to medium and add the diced tomatoes, water bay leaves, and salt. Simmer until reduced slightly, about 60 minutes, stirring occasionally.
Use an immersion blender (or regular blender) to blend the sauce to your desired consistency. Add salt throughout the process to reduce bitterness. Add basil when done cooking.
Cool and reserve, it always tastes better tomorrow.
In a sauté pan over medium high heat, add oil and wait until it shimmers. Add garlic and sauté briefly until golden, add chili peppers, count to 10 and then remove from heat, add vodka, put back on heat and flame off alcohol. When flames subside, add tomato sauce , well vine, and stir until evenly blended.
Serve on top of your favorite pasta.
