Makes 6 servings

Ingredients:

  • 1 cup canned light coconut milk
  • 3 scoops HealthyVine™
  • 1/2 medium banana
  • 1/4 cup 100% orange juice
  • 3 Tbsp. semisweet (or dark) chocolate chips
  • 1 tsp. extra-virgin coconut oil
  • Small resealable plastic bag
  • 1 Tbsp. raw almonds, finely chopped

Prep:

  1. Add coconut milk, HealthyVine™, banana, and orange juice to a blender. Blend until smooth. Divide evenly among 6 popsicle molds. Add a popsicle stick to each mold. Freeze for 4 hours.
  2. When popsicles are frozen, add chocolate chips and coconut oil to a small bowl. Microwave on high for 30 seconds; stir. Repeat until melted. Pour into a small resealable plastic bag.
  3. Place popsicles on a parchment paper-lined baking sheet. Snip off a tiny corner of chocolate bag. Pipe evenly over popsicles. Sprinkle almonds over top. Freeze for 15 minutes. Enjoy immediately, or freeze leftovers in an airtight container for up to 1 month.
