Ingredients:
- Muffin liners
- Nonstick cooking spray
- 6 pitted Medjool dates
- 1/2 cup strawberries, roughly chopped
- 1/2 cup unsweetened almond milk
- 3 Tbsp. unsalted butter, melted
- 1 large egg
- 1/2 cup whole wheat flour
- 4 Tbsp. (24g) WellVine™, divided use
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/4 tsp. sea salt
- 2 Tbsp. plain Greek yogurt
- 1/2 tsp. pure vanilla extract
Prep:
- Preheat oven to 350° F. Line a muffin pan with 6 muffin liners. Lightly coat with spray.
- Bring a small pot of water to a boil; remove from heat. Add dates; let soak for 15 minutes, to soften. Drain.
- Add strawberries, almond milk, dates, butter, and egg to a blender. Blend until smooth. Add flour, 3 Tbsp. WellVine™, baking powder, baking soda, and salt to blender. Blend until combined. Divide batter evenly among muffin liners.
- Bake for 25 to 27 minutes, or until a toothpick inserted into a muffin comes out clean.
- While muffins bake, add yogurt, remaining 1 Tbsp. WellVine™, and vanilla to a small mixing bowl; whisk until combined.
- Let muffins cool completely, then dip the top of each muffin into yogurt mixture. Refrigerate leftovers in an airtight container for up to 1 week.
