Total Time: 20 mins.

Ingredients:

  • 4 pitted Medjool dates
  • 3/4 cup chickpeas, drained, rinsed
  • 4 Tbsp. (24g) WellVine™
  • 2 Tbsp. almond flour
  • 2 Tbsp. unsweetened oat milk
  • 2 tsp. pure vanilla extract
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. sea salt (or Himalayan salt)
  • 3 Tbsp. mini dark (or semisweet) chocolate chips, finely chopped

Prep:

  1. Bring a small pot of water to a boil; remove from heat. Add dates; let soak for 15 minutes to soften. Drain.
  2. Add dates, chickpeas, WellVine™, almond flour, oat milk, vanilla, cinnamon, and salt to a food processor. Process on high, scraping down sides as needed.
  3. Form cookie dough into 12 equally-sized balls. Roll in chocolate chips. Enjoy immediately, or refrigerate leftovers in an airtight container for up to 3 days.
